Together they explored approaches to sustainability, encompassing both environmental and human aspects, and discussed effective ways to communicate these values to guests, with Tom Jenkins leading the way with key messages: "While environmental sustainability is of course a hot topic , what most interested the guests in these workshops was the question of human sustainability and the creation of a better, fairer and safer industry for all Many veteran chefs spoke of the changes they have introduced in the work practices of their teams and how they have adapted their business models, while our young chefs highlighted how important work-life balance is now for their generation.
